Mambo Chicken and a kid in tow

First, let’s talk about Mambo Chicken with Mango Salsa.
It was very good. I thought the marinade imparted a lot of flavor, but also a lot of sodium from the soy sauce (I’d try a low sodium type next time).
I had just made fresh salsa, so I diced up the mango and tossed in a bit of salsa instead of following the recipe to the letter. I also cooked the chicken on my tabletop grill instead of baking it in the oven.
Speaking of mangos, this OXO mango cutter rocks. After I remove the stone, I score it, then slice the flesh from the skin. I highly recommend it.
Scott and I have offset our training schedules by a day so that we’re not both running long runs on the same day. We didn’t wake up early enough to get both runs in before he had to leave for work. Since it wasn’t blazingly hot outside, I volunteered to take one for the team and do my run later with Sophie and the BOB.
Don’t get me wrong, I’m really thankful we have this stroller. It’s because of this Mercedes of joggers that we’ve been able to not only run together but it’s also allowed me to get out on days when I don’t have someone to watch Sophie. Having said that, it’s a big fucking thing. It probably weighs about 20 lbs (which might be light for a jogger, but it’s still pushing 20 lbs. Add a 24 lb kid to the thing and well, let’s just say you’re not going to run a PR with BOB.
We made it a total of about 3.7 miles before the park; Sophie had enough of the stroller scene. She played for about 45 minutes before we ran the .75 miles home.
I’m not surprised at the average pace. Pushing that thing was a bitch, and my legs were really tired. I’ll take it. Still beats sitting on the couch. Sophie agrees.
