I had every intention of just slogging through this morning’s run. Didn’t want to get out of bed. Didn’t want to push it.
However, I’ve learned that I have a better chance of getting through my day, especially those when I’m home all day with Sophie, if I workout in the morning. It’s like a weight is lifted and I can just get through the rest of the day without a run hanging over my head.
As for food? I had a meeting with a client at lunch time. My car was getting very expensive repairs (new tires and windshield) and after balancing my checkbook after vacation I kind of had an “oh, shit, I’m beyond broke” moment. Normally this would cause me to shove every variety of fried potato or other bagged food item in my mouth, but instead I, well, lost my appetite.
I know, I think that was a pig that just flew out the window.
I searched through the fridge and decided to do what I like to call a salad in a wrap. With a chicken tenderloin.
Before I left for the meeting (and to pay the bill for the car) I started cooking a pot of black beans. I tried a no-soak/bake method which worked pretty well. Only problem is I forgot I had the pot in the oven when I left and ended up overcooking them.
Fortunately, these beans were destined for quinoa black bean burgers, so a little overcooking didn’t hurt.
Sometimes I just need cheese. I melted jack cheddar on top. I would normally go for salsa and sour cream with something like this, but the only sour cream we have in the house is fat free, which I refuse to eat. The only thing I could find in the house was taco sauce.
The quinoa burgers were pretty good. I have a ton of mixture left so I’ll be eating this the rest of the week. The quinoa gives them some texture. I added shredded carrot to give color and (hopefully) flavor.
